– 4 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 1 tablespoon butter
– 1 onion, diced
– 8 oz mushrooms, sliced
– 3 garlic cloves, minced
– 1/2 cup chicken broth
– 1 cup heavy cream
– 1/2 teaspoon thyme
– Salt and pepper to taste
– 4 cups mashed potatoes (prepared)
– 4 cups fresh spinach
– Fresh parsley for garnish (optional)
Instructions:
1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes per side until browned and cooked through. Remove from skillet and set aside.
2. In the same skillet, melt the butter. Add diced onions and cook until softened, about 3-4 minutes.
3. Add mushrooms and cook until browned, another 5-6 minutes. Stir in minced garlic and cook for 1 minute.
4. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in heavy cream and thyme. Simmer for 5 minutes until the sauce thickens.
5. Return the chicken to the skillet and coat it with the creamy mushroom sauce. Heat until the chicken is warmed through.
6. In a separate pan, wilt the spinach over medium heat for 2-3 minutes until just softened.
