Grilled Lamb Chops & Shrimp Skewers with Cheesy Herb Grits

 

Ingredients:

 

For the Lamb Chops:

4 lamb chops
2 tbsp olive oil
2 garlic cloves, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
½ tsp smoked paprika
Salt and black pepper, to taste
For the Shrimp Skewers:

1 lb large shrimp (peeled and deveined, tails on)
2 tbsp olive oil
1 garlic clove, minced
½ tsp smoked paprika
½ tsp onion powder
Salt and black pepper, to taste
Wooden skewers (soaked in water for 30 minutes)
For the Cheesy Herb Grits:

1 cup quick-cooking grits
3 cups chicken or vegetable broth
½ cup heavy cream
1 cup sharp cheddar cheese, shredded
2 tbsp unsalted butter
1 tbsp fresh parsley, chopped
Salt and pepper, to taste
For the Green Beans:

1 cup fresh green beans, trimmed
1 tbsp olive oil
1 garlic clove, minced
Salt and pepper, to taste

Instructions:

1️⃣ Marinate the Lamb Chops:

Mix olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper in a bowl.
Rub this mixture over the lamb chops and let marinate for 20–30 minutes.
