Ingredients
For the Wings:
2 pounds chicken wings (drumettes and flats)
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika (optional, for smokiness)
For the Carolina Mustard BBQ Sauce:
½ cup yellow mustard
¼ cup apple cider vinegar
2 tbsp honey (or brown sugar for deeper sweetness)
1 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp hot sauce (like Frank’s, optional)
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Instructions
1. Prep the Wings
Preheat oven to 400°F (200°C), or heat your grill to medium-high.
Pat the wings dry with paper towels.
Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika.
2. Cook the Wings
Oven: Place wings on a wire rack over a baking sheet. Bake for 40–45 minutes, flipping halfway, until crispy and cooked through.
Grill: Grill for about 20–25 minutes, turning every 5 minutes, until nicely charred and cooked through.
3. Make the Sauce
While wings are cooking, combine all sauce ingredients in a saucepan over medium heat.
Simmer for 5–8 minutes, stirring occasionally, until slightly thickened.
Taste and adjust with more vinegar (for tang), honey (for sweet), or hot sauce (for heat).
4. Sauce the Wings
When wings are done, toss them in the warm mustard BBQ sauce, or brush the sauce on and broil for 2–3 minutes to caramelize.
5. Serve
Serve immediately with extra sauce on the side.
Pairs well with coleslaw, cornbread, or pickles.
