1 lb small shrimp (36/40 count), peeled and deveined, tails removed
For the Breading Station:
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
¼ cup cornmeal (optional, for added crunch)
Seasonings (mix into the flour or panko):
1 tsp paprika
1 tsp garlic powder
¼ tsp cayenne pepper (adjust to taste)
Salt and pepper to taste
For Frying:
Vegetable or canola oil (enough for deep frying)
Instructions
1. Prep the Breading Stations:
Bowl 1: Mix flour with paprika, garlic powder, cayenne, salt, and pepper.
Bowl 2: Beat the eggs.
Bowl 3: Mix panko breadcrumbs with cornmeal (if using) and a pinch of salt.
2. Bread the Shrimp:
Pat shrimp dry with paper towels.
Dredge each shrimp in seasoned flour, shaking off excess.
Dip into the beaten eggs.
Coat with panko mixture, pressing gently to adhere.
3. Heat the Oil:
In a deep skillet or pot, heat oil to 350°F (175°C). Use a thermometer for accuracy.
4. Fry the Shrimp:
Fry in batches (don’t overcrowd) for 2–3 minutes or until golden brown and crispy.
Remove with a slotted spoon and drain on a paper towel-lined plate.
5. Serve Hot:
Optional: Sprinkle with a pinch of sea salt right after frying.
Serve with dipping sauces like spicy mayo, cocktail sauce, or lemon wedges.
