Ingredients:
3 ripe bananas, mashed
1/2 cup unsalted butter
2 cups granulated sugar
1/2 cup evaporated milk (or regular milk, but evaporated works better)
1/2 teaspoon salt
1 teaspoon vanilla extract
Optional: 1/2 cup chopped walnuts or pecans
Optional: 1/2 cup white chocolate chips (for added creaminess)
Instructions:
1. Prepare a Pan:
Line an 8×8-inch baking dish with parchment paper or lightly grease it.
2. Cook the Fudge Base:
In a medium saucepan over medium heat, melt the unsalted butter.
Add the sugar, mashed bananas, milk, and salt.
Stir constantly and bring the mixture to a boil.
3. Boil & Thicken:
Once it starts boiling, reduce the heat slightly and let it simmer, stirring frequently.
Cook until the mixture thickens and reaches the soft ball stage (about 234–240°F / 112–115°C on a candy thermometer), or about 10–15 minutes.
4. Add Flavor & Finish:
Remove from heat and stir in the vanilla extract.
(Optional) Mix in chopped nuts or white chocolate chips.
5. Set the Fudge:
Pour the mixture into the prepared pan.
Smooth the top with a spatula and let it cool at room temperature.
Once cooled, refrigerate for at least 2 hours or until firm.
6. Serve:
Cut into squares and enjoy!
