1 bone-in prime rib roast (6-8 pounds)
2 tbsp olive oil
Salt and pepper to taste
Garlic cloves (optional)
INSTRUCTIONS :
Start by preheating your oven to 500°F (260°C). Place the prime rib roast on a rack inside a roasting pan and generously coat it with olive oil. Season all over with salt and pepper. For added flavor, you can insert garlic cloves into the roast using a paring knife if desired. Roast the prime rib at the high temperature of 500°F for 15 minutes. Then reduce the oven temperature to 325°F (160°C) and continue cooking until the roast reaches your desired level of doneness. Use a meat thermometer to check the temperature: 135°F (57°C) for medium-rare, 140°F (60°C) for medium, or 150°F (66°C) for well-done. Once done, remove the roast from the oven and let it rest for 15-20 minutes before slicing and serving.
