Ingredients
1.5 lbs sirloin steak, cut into bite-size pieces or strips
1/2 cup low-sodium soy sauce
2 tablespoons mirin or rice vinegar
2 tablespoons sesame oil
2 tablespoons melted butter (hibachi-style flavor)
1 tablespoon brown sugar or honey
1 tablespoon minced garlic (about 3 cloves)
1 tablespoon minced ginger
1 tablespoon lemon juice
1 teaspoon black pepper
Optional: 1–2 teaspoons sake (authentic hibachi flavor)
Optional: 1–2 teaspoons toasted sesame seeds
Instructions
1. In a bowl, whisk together soy sauce, mirin/rice vinegar, sesame oil, melted butter, brown sugar, garlic, ginger, lemon juice, and black pepper.
2. Add steak pieces and toss to coat.
3. Cover and marinate at least 30 minutes, ideally 2–4 hours.
(Avoid marinating overnight—soy + acid can make steak mushy.)
4. Cook steak on a griddle or skillet over high heat.
Sear until browned and cooked to your desired doneness, usually 3–5 minutes.
5. Serve with hibachi rice, veggies, and yum-yum sauce.
