Ingredients
1½ pounds ground beef (preferably 80/20)
1 cup crushed Ritz crackers (about 25 crackers)
½ cup finely chopped onion
½ cup finely chopped green bell pepper
2 large eggs, lightly beaten
½ cup milk
1½ teaspoons salt
¼ teaspoon black pepper
1½ cups shredded sharp cheddar cheese
Topping:
½ cup ketchup
½ cup brown sugar, packed
1 teaspoon yellow mustard
Instructions
1. Preheat oven:
Set to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
2. Mix the meatloaf:
In a large bowl, combine the ground beef, crushed Ritz crackers, onion, green pepper, eggs, milk, salt, pepper, and shredded cheddar.
Mix just until combined — don’t overwork the meat.
3. Shape and bake:
Place the mixture into the prepared loaf pan and smooth the top evenly.
4. Prepare the topping:
In a small bowl, stir together the ketchup, brown sugar, and mustard until smooth. Spread half of this mixture over the top of the meatloaf.
5. Bake:
Bake uncovered for 45 minutes. Remove from the oven and spread the remaining topping evenly over the loaf.
6. Finish baking:
Return to the oven and bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
7. Rest and serve:
Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, green beans, or Cracker Barrel–style mac & cheese.
