1. Cook the potatoes:
* Heat 1 tbsp olive oil in a skillet over medium-high heat.

2. Sear the steak:
* Pat the steak dry and season generously with salt and pepper.

* Add 1 tbsp butter in the last minute and baste with melted butter.
* Rest for 5 minutes.
3. Fry the eggs:
* In the same pan (or a clean one), fry eggs sunny-side-up or over-easy with a touch of butter.

* Plate the steak, top with fried eggs, and add the crispy potatoes on the side.
