Ingredients
● 2 cups cooked chicken (shredded or chopped)
● 3 cups dry spaghetti (broken into 2-inch pieces)
● 2 cans (10.5 oz each) cream of mushroom soup
● 2 cups grated sharp cheddar cheese
● ¼ cup finely diced green pepper
● ¼ cup finely diced onion
● 1 tsp garlic powder
● ½ tsp salt (adjust to taste)
● ½ tsp black pepper
● 1 cup chicken broth (or milk for extra creaminess)
● ½ tsp crushed red pepper flakes (optional for heat)
● ½ cup additional shredded cheddar (for topping)
Directions
1️⃣ Cook the Spaghetti:
Bring a large pot of salted water to a boil.
Cook the spaghetti just until al dente (it will finish cooking in the oven). Drain and set aside.
2️⃣ Mix the Casserole Base:
In a large mixing bowl, combine chicken, cream of mushroom soup, cheddar cheese, green pepper, onion, garlic powder, salt, and black pepper.
Stir in chicken broth (or milk) to thin out the mixture slightly.
3️⃣ Assemble & Bake:
Preheat oven to 350°F (175°C).
Add the cooked spaghetti to the chicken mixture, tossing to coat everything evenly.
Transfer to a greased 9×13-inch baking dish and spread evenly.
Sprinkle extra shredded cheddar on top.
4️⃣ Bake Until Bubbly:
Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
5️⃣ Serve & Enjoy:
Let cool for a few minutes before serving. Garnish with fresh parsley if desired.
Tips & Variations:
● Add crispy bacon bits or diced ham for extra flavor.
● Swap cream of mushroom soup for cream of chicken if preferred.
● For a spicy kick, add chopped jalapeños or a dash of hot sauce.
● Store leftovers in an airtight container for up to 3 days—it reheats beautifully!
