Chicken Tikka Masala

Ingredients:

 

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

For the marinade:

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon paprika

1/2 teaspoon turmeric

Salt and pepper, to taste

For the sauce:

2 tablespoons vegetable oil

1 onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon turmeric

1 teaspoon paprika

1/2 teaspoon chili powder (adjust to taste)

1 can (14 oz/400g) crushed tomatoes

1 cup heavy cream

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan bread (for serving)

Directions:

 

In a bowl, combine all the marinade ingredients: yogurt, lemon juice, vegetable oil, minced garlic, grated ginger, ground cumin, ground coriander, paprika, turmeric, salt, and pepper. Mix well.

Add the chicken pieces to the marinade and coat evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.

Preheat the grill or broiler. Thread the marinated chicken onto skewers and grill or broil until cooked through and slightly charred, about 10-12 minutes.

While the chicken is cooking, prepare the sauce. Heat vegetable oil in a large skillet over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.

Add the ground cumin, ground coriander, turmeric, paprika, and chili powder. Cook for 1-2 minutes until fragrant.

Stir in the crushed tomatoes and simmer for 10 minutes, stirring occasionally.

Add the grilled chicken pieces to the sauce along with any juices from the skewers. Stir in the heavy cream and simmer for an additional 5 minutes.

Season with salt and pepper to taste.

Garnish with chopped fresh cilantro.

Serve the Chicken Tikka Masala hot over cooked basmati rice or with naan bread.
