Herb Butter Beef Tenderloin Roast

***For the Beef Tenderloin:
– 1 (4-5 lb) beef tenderloin roast, trimmed
– 2 tbsp olive oil
– Salt and pepper to taste
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tsp fresh rosemary, chopped
– 1 tsp fresh thyme, chopped

***For the Herb Butter:
– ½ cup unsalted butter, softened
– 3 cloves garlic, minced
– 1 tbsp fresh rosemary, chopped
– 1 tbsp fresh thyme, chopped
– 1 tsp Dijon mustard
– 1 tsp lemon zest
– 1 tbsp fresh parsley, chopped (for garnish)

1. Prepare the herb butter by combining softened butter, minced garlic, rosemary, thyme, Dijon mustard, and lemon zest in a small bowl. Set aside.
2. Preheat your oven to 450°F (230°C).
3. Season the beef tenderloin with olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme. Rub the seasoning evenly over the roast.
4. Place the seasoned beef in the oven and roast for 35-40 minutes, or until the desired level of doneness is reached (internal temperature of 125°F for medium-rare).
5. Once cooked, remove the roast from the oven and let it rest for 10 minutes. Then, spread the prepared herb butter on top of the roast while it rests.
6. Garnish with fresh parsley before serving.
