1 lb shrimp, peeled and deveined
1 lb crab legs
1 lb smoked sausage, sliced
1/2 lb chicken thighs, diced
1 bell pepper, diced ️

2 stalks celery, chopped

1 can diced tomatoes
6 cups chicken broth
1/4 cup olive oil
1/4 cup flour
1 tsp paprika ️

2 bay leaves

2 cups white rice
4 cups water
1 tsp salt

Make the Roux: In a large pot, heat olive oil over medium heat. Add flour to the pot and whisk constantly to create a roux. Continue cooking, stirring frequently, until the roux turns a dark golden brown (about 10-15 minutes).

Cook the Vegetables: Add the diced onion, bell pepper, celery, and garlic to the pot with the roux. Cook for 5-7 minutes until the vegetables soften.

Add the Broth and Spices: Pour in the chicken broth, diced tomatoes, paprika, thyme, bay leaves, and salt and pepper. Bring the mixture to a boil, then reduce the heat to a simmer.

Cook the Meat and Seafood: Add the sausage, chicken, and crab legs to the gumbo. Simmer for about 30 minutes, allowing the flavors to meld.

Prepare the Rice: While the gumbo simmers, cook the rice. In a separate pot, bring water and salt to a boil. Add the rice, cover, and reduce the heat to low. Cook for 15-20 minutes until the rice is tender.
