For the sandwich:

8 large shrimp, peeled and deveined
4 slices of thick bread (such as sourdough or brioche)
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon garlic powder
1/2 teaspoon smoked paprika ️
Salt and pepper to taste
1/2 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
Fresh parsley, chopped for garnish

Prepare the shrimp:

In a skillet, heat olive oil over medium heat. Add the shrimp and season with salt, pepper, garlic powder, and smoked paprika.
Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and set aside.
Assemble the sandwich:

Butter one side of each slice of bread. Place the buttered side down on a clean surface.
Layer one slice of bread with shredded mozzarella and cheddar cheese, followed by the cooked shrimp. Top with the second slice of bread, buttered side up.
