Honey Mustard Chicken with Roasted Asparagus and Cheese ár

– chicken breasts – 4 units
– honey – 4 spoons
– – Dijon mustard – 2 tablespoons
– garlic – 2 teeth, chopped
– asparagus – 500 g
– – potatoes – 500 g
– 3️ olive oil – 3 tablespoons
– cheese (can be mozzarella or parmesan) – 100 g, grated
– – salt – to pleasure
– gusto pepper – to taste

1. Prepare the chicken: In a bowl, mix honey, Dijon mustard, minced garlic, salt and pepper. Add the chicken breasts to the mix and make sure they are well covered. Let it marinate for at least 30 minutes in the refrigerator.

2. Preheat the oven: Preheat the oven to 200°C (390°F).

3. Prepare the potatoes: Wash and peel the potatoes, then cut them into medium pieces. In a baking tray, mix the potatoes with 2 tablespoons of olive oil, salt and pepper. Bake the potatoes in the preheated oven for 20 minutes.

4. Prepare Asparagus: Wash asparagus and cut off the hard parts of the stems. In a bowl, mix the asparagus with 1 tablespoon of olive oil, salt and pepper. After 20 minutes, remove the tray from the oven and add the asparagus to the tray with potatoes. Bake it all together for 15 more minutes.

5. Cooking the chicken: While the potatoes and asparagus are cooking, heat a large skillet over medium-high heat. Add a little olive oil if neccessary. Cook the marinated chicken breasts for 5-7 minutes on each side, or until golden brown and fully cooked.

6. Add cheese: When the potatoes and asparagus are almost done, remove the tray from the oven and sprinkle the grated cheese over the asparagus. Replace the tray in the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

7. Serve: On a plate, place a chicken breast next to a serving of cheesy potatoes and asparagus. Serve hot and enjoy this delicious and colorful dish.
