* 3 1/2 cups all-purpose flour
* 1 packet (2 1/4 tsp) active dry yeast
* 1 cup warm water
* 1 tbsp sugar
* 1 tsp salt

For the Filling:
* 8 oz fresh mozzarella (cubed)
* 2 tbsp fresh rosemary (chopped)
* 1/4 cup Parmesan cheese (grated)

For the Baking Soda Bath:
* 4 cups water
* 1/4 cup baking soda

1️⃣ Prepare the Dough: Combine warm water, sugar, and yeast in a bowl. Let sit for 5 minutes until frothy. Add flour and salt, kneading until smooth. Cover and let rise for 30-45 minutes.

2️⃣ Make the Filling: Mix mozzarella cubes, rosemary, and Parmesan in a small bowl.

3️⃣ Shape the Pretzels: Divide the dough into 8 portions. Roll each into a rope, flatten slightly, and spoon in the filling. Fold, seal the edges, and shape into pretzels.

4️⃣ Baking Soda Bath: Bring water to a near boil, remove from heat, and stir in baking soda. Dip each pretzel in for 30 seconds, then place on a baking sheet.

5️⃣ Bake to Perfection: Sprinkle with Parmesan and rosemary. Bake at 425°F (220°C) for 15-20 minutes, until golden brown.
