Bacon-Wrapped Venison Tenderloin with Garlic Cream Sauce

1 venison tenderloin (1–1.5 lbs)
6–8 slices of bacon
2 tbsp olive oil or butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tbsp fresh parsley, chopped
Salt and pepper to taste

1️⃣ Prepare the Venison:

Preheat your oven to 375°F (190°C).
Season the venison tenderloin with salt and pepper. Wrap it completely in bacon, securing with toothpicks if necessary.
2️⃣ Sear the Tenderloin:

Heat olive oil in an oven-safe skillet over medium-high heat. Sear the bacon-wrapped tenderloin on all sides until browned.
3️⃣ Bake the Tenderloin:

Transfer the skillet to the oven and roast for 15–20 minutes or until the internal temperature reaches 130°F (medium-rare). Remove from the oven and let rest for 5 minutes.
4️⃣ Prepare the Garlic Cream Sauce:

In the same skillet, melt butter over medium heat. Sauté minced garlic until fragrant. Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
5️⃣ Serve:

Slice the venison tenderloin and drizzle generously with the garlic cream sauce. Garnish with fresh parsley.
