1 lb boneless, skinless chicken breasts
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1 inch ginger, minced
1–2 tablespoons freshly ground black pepper
Optional: 1 tablespoon oyster sauce, sliced chili peppers, 1 teaspoon sugar or honey, additional vegetables (broccoli, snap peas), chopped green onions for garnish

Marinate the chicken by combining it with soy sauce and cornstarch in a bowl. Let it sit for 15-20 minutes.
Heat vegetable oil in a skillet over medium-high heat and stir-fry the marinated chicken for 5-7 minutes until browned and cooked through.
Add sliced bell pepper, onion, garlic, and ginger to the skillet and stir-fry for 2-3 minutes until tender-crisp.
Return the cooked chicken to the skillet, add black pepper and oyster sauce (if using), and toss everything together until well combined.
Serve hot, garnished with chopped green onions, over steamed rice or noodles.
