INGREDIENTS:
– 1 lb large shrimp, peeled and deveined
– 2 tablespoons Cajun or Creole seasoning
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1 red bell pepper, finely chopped
– 1 cup heavy cream
– 2 cloves garlic, minced
– 1/2 teaspoon smoked paprika
– 8 ounces pasta (e.g., fettuccine, linguine)
– Salt and freshly ground black pepper to taste
– 1/4 cup grated Parmesan cheese
– 1/4 cup chopped parsley for garnish
INSTRUCTIONS:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the shrimp with Cajun or Creole seasoning. Heat olive oil and butter in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- In the same skillet, add chopped red bell pepper and sauté for 2-3 minutes until tender. Add garlic and smoked paprika, sautéing for an additional minute until fragrant.
- Reduce heat to medium-low, add heavy cream, and simmer for 5-7 minutes, or until the sauce begins to thicken. Season with salt and pepper to taste.
- Return the shrimp to the skillet, along with the cooked pasta. Toss to coat evenly in the sauce. Cook for 1-2 minutes until everything is heated through.
- Serve the dish garnished with grated Parmesan cheese and chopped parsley.
