Directions:
In a small bowl, dissolve the sugar and yeast in the warm water. Let it sit for about 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Add the yeast mixture, olive oil, and honey (if using) to the dry ingredients. Stir until the dough starts to come together.
Knead the dough on a floured surface for about 5-7 minutes until it’s smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
Grease the crockpot with a bit of oil or cooking spray. Shape the dough into a round loaf and place it in the bottom of the crockpot.
Cover the crockpot with the lid and let the dough rise for 1-1.5 hours, or until it doubles in size.
Once the dough has risen, set the crockpot to cook on the “High” setting for 2-2.5 hours. Check the bread at the 2-hour mark by gently tapping it on top. The bread should sound hollow when tapped, indicating it’s done.
If you want a crispier crust, carefully remove the bread from the crockpot and place it on a baking sheet. Pop it under the broiler for 2-3 minutes, watching closely to avoid burning.
Let the bread cool for a few minutes before slicing and serving.
