1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional, for color and flavor)
1 cup cold sparkling water (or beer for extra crispiness)
1 egg (optional, for added richness)

Mix Dry Ingredients: In a bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and paprika.
Add Liquids: Gradually whisk in the cold sparkling water (or beer) and egg (if using) until smooth. The batter should be thick enough to coat the back of a spoon.
Rest the Batter: Let the batter sit for about 10-15 minutes to allow the ingredients to blend.
Coat & Fry: Dip fish fillets into the batter, letting excess drip off, then fry in hot oil (350°F/175°C) until golden brown and crispy, about 3-4 minutes per side.
Drain & Serve: Remove and place on a paper towel-lined plate. Serve hot with tartar sauce, lemon wedges, or your favorite dipping sauce.
