Ingredients:


โ€“ 4 thin-cut sirloin steaks (about 1/4 inch thick)
โ€“ 1 cup shredded mozzarella cheese
โ€“ 1/2 cup crumbled blue cheese (optional)
โ€“ 1/4 cup fresh spinach, chopped
โ€“ 1 small red bell pepper, julienned
โ€“ 1 tsp garlic powder
โ€“ 1 tsp smoked paprika
โ€“ 1/2 tsp black pepper
โ€“ Salt, to taste
โ€“ 2 tbsp olive oil (for searing)

For the Sauce:
โ€“ 1/2 cup beef broth
โ€“ 1/4 cup heavy cream
โ€“ 1 tbsp Dijon mustard
โ€“ 1/4 cup grated Parmesan cheese
โ€“ 1 tbsp butter

 

Directions:


1. Prepare the Steak Rolls:
โ€“ Lay the steaks flat on a cutting board. Season both sides with garlic powder, smoked paprika, salt, and black pepper.
โ€“ On one side of each steak, spread the mozzarella, blue cheese (if using), chopped spinach, and julienned bell pepper evenly.
โ€“ Roll each steak tightly and secure them with toothpicks or kitchen twine.

2. Sear the Rolls:
โ€“ Heat olive oil in a skillet over medium-high heat.
โ€“ Sear the steak rolls for 2-3 minutes on each side until they are nicely browned. Remove them from the skillet and set aside.

3. Make the Sauce:
โ€“ In the same skillet, add the beef broth, scraping up any browned bits from the bottom.
โ€“ Stir in the Dijon mustard, heavy cream, and grated Parmesan cheese. Let it simmer until the sauce thickens slightly.
โ€“ Add the butter and whisk until the sauce is smooth.

4. Combine and Finish:
โ€“ Return the steak rolls to the skillet and spoon the sauce over the top.
โ€“ Cover the skillet and let it simmer on low heat for 5-7 minutes, or until the cheese inside melts and the steak reaches your desired level of doneness.
