Lemon Herb Roasted Chicken with Aioli Sauce

For the chicken:

1 whole chicken (3-4 pounds)
2 tablespoons olive oil
1 lemon, grated and juice
2 cloves of garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/8 teaspoon black pepper
For the aioli sauce:

1/2 cup mayonnaise
1/4 cup sour cream
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper

Prepare the chicken:

Preheat oven to 425°F (220°C).
In a small bowl, combine olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt and pepper.
Rub the mixture all over the chicken.
Roasted chicken:

Place the chicken in a roasting pan.
Roast for 1 hour and 15 minutes, or until internal temperature reaches 165°F (74°C).
Let the chicken rest for 10 minutes before carving.
Make the aioli sauce:

In a small bowl, combine mayonnaise, sour cream, garlic, lemon juice, Dijon mustard, salt and pepper.
Mix well until smooth.
Serve:

Serve the roast chicken with aioli sauce.
Tips:

For crispier skin, grill the chicken at a higher temperature for the first 15 minutes.
You can add other herbs, such as oregano or sage, to the marinade.
