Ingredients:
– 4 boneless chicken thighs, cut into 1 inch pieces
– 1 cup broccoli florets
– 3 tbsp cornstarch, divided
– 3 cloves garlic, minced
– 1/2 cup apple juice
– 1/2 cup bourbon
– 1/2 cup chicken broth
– 1/4 cup soy sauce
– 1/3 cup brown sugar
– 1/4 cup ketchup
– 1/4 tsp ground ginger
– 1/2 tsp red pepper flakes
– 1/4 tsp black pepper
– 2 tsp apple cider vinegar
– 4 tbsp vegetable oil, divided
Instructions:
1️⃣ Season the chicken with black pepper and mix with 2 tablespoons of cornstarch. Put aside.
2️⃣ In a bowl, mix together bourbon, broth, soy sauce, apple cider vinegar, apple juice, ketchup, brown sugar, ginger, garlic, and red pepper flakes. Put aside.
3️⃣ Over medium heat, add 2 tablespoons of oil and cook the broccoli florets until tender, about 5 minutes, stirring often. Remove and set aside.
4️⃣ In the same pan, add the remaining oil over medium-high heat and add the chicken. Cook for 3 minutes on each side and then remove from the pan, putting aside.
5️⃣ Mix 1 tablespoon cornstarch with 1 tablespoon of cold water to create a slurry. Put aside.
6️⃣ Add the bourbon sauce mixture to the pan and bring to a boil. Add the chicken back in and cook until the sauce reduces, about 10-12 minutes.
7️⃣ Stir in the broccoli and the cornstarch slurry mixture. Garnish with sesame seeds and enjoy.
