Cheesy Stuffed Meatloaf Bites

1 lb ground beef
1/2 lb ground pork
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/2 small onion, finely chopped
2 cloves garlic, minced
1/2 cup shredded mozzarella cheese
1/2 cup cheddar cheese, cubed
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1 tablespoon parsley, chopped

Preheat oven to 375°F (190°C). Grease a muffin tin or line with silicone cups.
In a small bowl, mix breadcrumbs and milk. Let sit for 5 minutes to soften.
In a large bowl, combine ground beef, ground pork, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, paprika, and oregano. Add the soaked breadcrumbs and mix well.
Take a spoonful of the mixture and press it into each muffin cup, creating a well in the center.
Add a cube of cheddar cheese into each well and top with more meat mixture, sealing the cheese inside.
Bake for 18-22 minutes, or until the meat is cooked through.
Sprinkle with shredded mozzarella and return to the oven for 2-3 minutes, until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving. Garnish with fresh parsley.
