1. Preheat the Oven: • Preheat your oven to 400°F (200°C). 2. Prepare the Marinade: • In a small bowl, mix together the ketchup, soy sauce, Worcestershire sauce, brown sugar, apple cider vinegar, and minced garlic until well combined. 3. Marinate the Pork Chops: • Season the pork chops with salt and pepper. Place them in a resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours for more flavor. 4. Prepare the Potatoes: • In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. 5. Bake the Pork Chops and Potatoes: • Place the marinated pork chops on a baking sheet. Arrange the potatoes around the pork chops in a single layer. • Bake in the preheated oven for 25-30 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C), and the potatoes are tender and golden brown. 6. Serve: • Remove the baking sheet from the oven and let the pork chops rest for a few minutes. Serve the pork chops with the roasted potatoes, garnished with fresh herbs if desired.
