– 2 medium-sized yellow squash

– 1 cup shredded cheddar cheese

– 1/4 cup grated Parmesan cheese

– 1/4 cup breadcrumbs

– 2 tablespoons olive oil

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– Salt and pepper to taste

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Slice the yellow squash into rounds, approximately 1/4 inch thick. In a small bowl, combine the breadcrumbs, Parmesan cheese, dried oregano, dried basil, salt, and pepper.

Brush both sides of each squash round with olive oil and then coat them in the breadcrumb mixture. Arrange the coated squash rounds on the prepared baking sheet, making sure they are not touching each other.

Sprinkle the shredded cheddar cheese evenly over the squash rounds. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cheese is golden and bubbly.
