Cucumber, Tomato, and Onion Salad

 

 

 

 

 

 

 

Ingredients:

2 cucumbers, thinly sliced
2 ripe tomatoes, chopped
1 small red onion, thinly sliced
1 tablespoon olive oil
2 tablespoons red wine vinegar
1 teaspoon sugar
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon dried basil
1 teaspoon onion powder
Fresh dill or parsley for garnish (optional)

 

How to Make It:

Slice the veggies – Thinly slice the cucumbers, chop the tomatoes, and slice the
onion. Place everything in a large mixing bowl.

Prepare the marinade – In a small bowl, whisk together olive oil, red wine vinegar, sugar, salt, pepper, basil, and onion powder.

Toss & coat – Pour the marinade over the vegetables and toss until everything is well coated.

Chill & serve – Let the salad sit in the refrigerator for at least 30 minutes before serving to let the flavors meld together. Garnish with fresh dill or parsley. Enjoy!
