For the French Toast:
8 slices of thick-cut brioche bread
4 large eggs
1 cup whole milk
1 tsp vanilla extract
1/2 tsp ground cinnamon
2 tbsp granulated sugar
Pinch of salt
Butter or oil for frying
For the Filling:
4 oz cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
For the Cinnamon Sugar Coating:
1/2 cup granulated sugar
1 tsp ground cinnamon

Prepare the Filling: In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.

Assemble the Toast: Spread a layer of the cream cheese mixture on one slice of brioche, then top with another slice to create a sandwich. Repeat for all slices.

Prepare the Custard: In a shallow bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, granulated sugar, and a pinch of salt.

Heat the Pan: In a large skillet or griddle, melt some butter or heat a little oil over medium heat.

Dip and Cook: Dip each stuffed bread sandwich into the custard mixture, coating both sides, then place it on the hot skillet. Cook for about 2-3 minutes per side until golden brown and crispy.
