Sausage, Egg, and Cheese Breakfast Roll-Ups

 

 

 

 

 

 

Ingredients:

1 lb breakfast sausage (either mild or spicy, depending on preference)
6 large eggs
1 cup shredded cheddar cheese (or your favorite cheese)
1 tablespoon butter or oil (for cooking eggs)
4 large flour tortillas (soft taco-sized)
Salt and pepper, to taste
Optional: hot sauce, salsa, or ketchup for dipping

In a large skillet, cook the breakfast sausage over medium heat. Break it up into small pieces as it cooks.
Cook until the sausage is browned and fully cooked, about 5-7 minutes. Once done, drain any excess fat and set the sausage aside.
Scramble the Eggs:
In a bowl, crack the eggs and beat them with a pinch of salt and pepper.
In the same skillet (wipe it clean first if necessary), melt 1 tablespoon of butter or heat a little oil over medium-low heat.
Pour in the beaten eggs and gently stir until they’re scrambled and cooked to your desired consistency. Remove from heat.
Assemble the Roll-Ups:

Lay out a flour tortilla on a flat surface.
Place a few spoonfuls of cooked sausage in the center of the tortilla.
Add a generous portion of scrambled eggs on top of the sausage.
Sprinkle with shredded cheddar cheese (or any cheese you prefer).
Roll-Up:

Fold in the sides of the tortilla and then roll it up tightly from the bottom to secure all the ingredients inside.
Optional Toasting:

For a crispy exterior, you can heat a little butter or oil in a skillet over medium heat and toast each breakfast roll-up for 1-2 minutes on each side until golden brown and crispy.
Serve:

Slice the roll-ups in half if desired and serve with hot sauce, salsa, or ketchup on the side for dipping.
