6 large eggs
1 cup shredded cheddar cheese (or your favorite cheese)

Instructions:
In a large skillet, cook the breakfast sausage over medium heat. Break it up into small pieces as it cooks.
Cook until the sausage is browned and fully cooked, about 5-7 minutes. Once done, drain any excess fat and set the sausage aside.
Scramble the Eggs:
In a bowl, crack the eggs and beat them with a pinch of salt and pepper.

Fold in the sides of the tortilla and then roll it up tightly from the bottom to secure all the ingredients inside.

For a crispy exterior, you can heat a little butter or oil in a skillet over medium heat and toast each breakfast roll-up for 1-2 minutes on each side until golden brown and crispy.
