Preheat your oven to 375ยฐF (190ยฐC).

โ€“ In a large bowl, toss potatoes and onions with 2 tbsp olive oil, 1 tsp paprika, salt, and pepper.
โ€“ Rub lamb chops with 1 tbsp olive oil, minced garlic, remaining paprika, oregano, rosemary, lemon juice, and salt and pepper.
