โ Lamb and Vegetables:
โ 6-8 lamb chops
โ 4 medium potatoes, peeled and cubed
โ 2 large onions, sliced

โ 3 tbsp olive oil

โ 1 tsp dried oregano
โ 1 tsp dried rosemary

Preheat your oven to 375ยฐF (190ยฐC).
โ In a large bowl, toss potatoes and onions with 2 tbsp olive oil, 1 tsp paprika, salt, and pepper.
โ Rub lamb chops with 1 tbsp olive oil, minced garlic, remaining paprika, oregano, rosemary, lemon juice, and salt and pepper.
โ Spread the seasoned potatoes and onions in an even layer in a roasting pan.
โ Place the lamb chops on top of the vegetables.
โ Cover the pan with foil and roast for 30 minutes.
โ Remove the foil, flip the lamb chops, and roast for an additional 15-20 minutes until the lamb is golden and potatoes are tender.
โ Sprinkle with fresh parsley before serving.
