8 lamb chops (about 1-inch thick)
3 tbsp unsalted butter
4 garlic cloves (minced)
2 tbsp fresh lemon juice
1 tsp fresh rosemary (chopped)
1 tsp fresh thyme (chopped)

Pat the lamb chops dry with paper towels. Season both sides generously with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Add the lamb chops and sear for 3-4 minutes on each side until browned. Remove and set aside.

Lower the heat to medium and melt the butter in the same skillet. Add minced garlic and sauté for 30 seconds until fragrant. Stir in rosemary, thyme, and lemon juice.
