Instructions
Preheat oven to 400°F (200°C). Toss potato wedges with 2 tbsp olive oil, paprika, salt, and pepper. Spread on a baking sheet and bake for 30 minutes, flipping halfway, until crispy.
Season steak with salt and pepper. Heat 2 tbsp olive oil in a skillet over high heat. Sear steak for 3-4 minutes per side for medium-rare.
Reduce heat to low. Add butter, garlic, and thyme to the skillet. Baste steak with melted butter for 1-2 minutes.
Remove steak, rest for 5 minutes, then slice. Garnish with parsley.
