Garlic Butter Herb Steak Bites

For the Steak Bites:
1 ½ lbs sirloin steak (or ribeye), cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon smoked paprika
For the Garlic Butter Sauce:
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh parsley, chopped
½ teaspoon red pepper flakes (optional)

Prepare the Steak: Pat steak cubes dry with paper towels. Toss in a bowl with olive oil, salt, black pepper, garlic powder, and smoked paprika.
Sear the Steak: Heat a large skillet over medium-high heat. Add steak bites in a single layer (cook in batches if needed). Sear for 2 minutes per side until browned. Remove from skillet and set aside.
Make the Garlic Butter Sauce: Reduce heat to medium. Melt butter in the same skillet, then add minced garlic, thyme, rosemary, parsley, and red pepper flakes. Sauté for 30 seconds until fragrant.
Coat the Steak: Return steak bites to the skillet and toss in the garlic butter sauce for 1 minute.
Serve: Enjoy warm, garnished with extra parsley.
