Grilled Steak with Cheese-Stuffed Tortillas

For the Steak:

1 lb beef tenderloin, sirloin, or your favorite steak cut
Salt and pepper to taste
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika ️
Fresh lime juice (optional)
For the Cheese-Stuffed Tortillas:

4 flour tortillas
1 1/2 cups shredded mozzarella cheese
1/2 cup crumbled feta or goat cheese
Fresh cilantro leaves for garnish
1 tbsp butter for grilling

Grill the Steak:

Preheat your grill to medium-high heat.
Season your steak with salt, pepper, garlic powder, and smoked paprika. Optionally, squeeze fresh lime juice over the steak.
Drizzle olive oil on the grill grate or brush on the steak, then place it on the grill.
Grill the steak for about 4-6 minutes per side for medium-rare, or longer for desired doneness. Once done, remove from the grill and let it rest for a few minutes before slicing.
Prepare the Cheese-Stuffed Tortillas:

While the steak is grilling, heat a large skillet or grill pan over medium heat and add a bit of butter.
Place one tortilla on the skillet and sprinkle with shredded mozzarella cheese, crumbled feta or goat cheese, and fresh cilantro.
Top with a second tortilla and cook for 2-3 minutes on each side, or until golden brown and the cheese has melted.
Remove from heat and slice into wedges.
Assemble the Dish:

Slice the grilled steak into thin strips and place them over the grilled cheese-stuffed tortillas.
Garnish with more cilantro and serve hot.
