Cajun Shrimp and Chicken Alfredo

For the Chicken:
2 boneless, skinless chicken breasts (sliced)
1 tbsp olive oil
1 tsp Cajun seasoning
½ tsp salt
½ tsp black pepper
½ tsp smoked paprika

For the Shrimp:
8 large shrimp, peeled & deveined
1 tbsp butter
½ tsp Cajun seasoning
½ tsp garlic powder

For the Creamy Cajun Alfredo Sauce:
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
1 tsp Cajun seasoning
½ tsp black pepper
½ cup grated Parmesan cheese
¼ cup fresh parsley, chopped

For the Pasta:
12 oz fettuccine pasta
1 tbsp salt (for boiling water)

1. Cook the Pasta: Boil a large pot of salted water and cook the fettuccine until al dente. Drain and set aside.
2. Grill the Chicken: In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun spices and cook for 5-6 minutes on each side until golden brown. Set aside.
3. Sear the Shrimp: In the same skillet, melt butter and add shrimp. Sprinkle with Cajun seasoning and garlic powder. Cook for 2-3 minutes per side until shrimp is pink. Set aside.
4. Make the Sauce: In the pan, melt butter and sauté the garlic until fragrant. Add heavy cream and chicken broth, along with Cajun seasoning and black pepper. Let it simmer for 5 minutes.
5. Add Parmesan & Toss: Stir in the Parmesan until melted and smooth. Mix in the cooked fettuccine, ensuring it’s fully coated in the creamy sauce.
6. Assemble & Serve: Plate the pasta and top with the grilled chicken and shrimp. Garnish with fresh parsley for a pop of color.
