8 slices cooked bacon , chopped
1 cup shredded cheddar cheese
1/2 cup cream cheese , softened
1/4 cup sour cream
1/4 cup ranch dressing (plus extra for dipping, optional)
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and freshly ground black pepper , to taste
1 green onion , thinly sliced (optional, for garnish)

Step 1: Prepare the Creamy Filling
In a medium mixing bowl, combine the softened cream cheese, sour cream, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
Stir in half of the chopped bacon and half of the shredded cheddar cheese. Reserve the remaining bacon and cheese for topping.
Step 2: Assemble the Roll-Ups
Lay out the flour tortillas on a clean surface.
Spread an even layer of the creamy filling over each tortilla, leaving a small border around the edges.
Sprinkle the remaining shredded cheddar cheese and chopped bacon evenly over the filling.
Starting at one edge, tightly roll up each tortilla into a log shape. Press gently to seal.
Step 3: Slice and Cook
Heat a large skillet over medium heat. Lightly grease the skillet with cooking spray or butter.
Place the rolled tortillas seam-side down in the skillet and cook for 2-3 minutes per side , or until golden brown and slightly crispy. You can also bake them in the oven at 375°F (190°C) for 10-12 minutes if you prefer a softer texture.
Remove the roll-ups from the skillet and let them cool for 2-3 minutes.
Step 4: Slice and Serve
Use a sharp knife to slice each roll-up into 1-inch pieces.
Arrange the roll-ups on a serving platter and garnish with sliced green onions if desired.
