Crockpot Corned Beef

3-4 lb corned beef brisket (with seasoning packet)
4 cups beef broth
1 onion, quartered
4 garlic cloves, smashed
4 medium potatoes, quartered
4 large carrots, cut into 3-inch pieces
1/2 head of cabbage, cut into wedges
1 tbsp Dijon mustard (optional, for serving)
Fresh parsley (optional, for garnish)

Rinse the corned beef brisket under cold water to remove excess brine.
Place the brisket in the crockpot and sprinkle the included seasoning packet over the meat.
Add beef broth, onion, and garlic cloves to the crockpot.
Cover and cook on low for 8-9 hours, or until the corned beef is tender.
About 2 hours before the corned beef is done, add the potatoes and carrots to the crockpot.
In the last 30 minutes, add the cabbage wedges on top of the meat and vegetables.
Once cooked, remove the corned beef and vegetables from the crockpot. Slice the corned beef against the grain.
Serve with a drizzle of Dijon mustard and garnish with fresh parsley.
