Baked Chicken Legs with Roasted Vegetables

✅ Chicken Marinade:

6-8 chicken drumsticks
3 tbsp olive oil
2 tbsp soy sauce
2 tbsp honey
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
½ tsp black pepper
½ tsp salt

2 cups baby potatoes (halved)
2 large carrots (chopped)
1 small onion (sliced)
Instructions:
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Marinate Chicken: In a bowl, mix olive oil, soy sauce, honey, and spices. Coat the chicken drumsticks and let marinate for at least 30 minutes.
3️⃣ Prepare Vegetables: Toss potatoes, carrots, and onions in a bit of olive oil, salt, and pepper.
4️⃣ Assemble & Bake: Arrange the vegetables in a baking dish, then place the chicken on top. Pour any remaining marinade over.
5️⃣ Bake for 40-45 minutes, flipping halfway, until the chicken is golden brown and the vegetables are tender.
