For the ribs:
1.5โ2 kg pork ribs (baby back or spare ribs)
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon salt (optional but recommended)
For the BBQ sauce (optional but tasty!):
1 cup ketchup
1/3 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon mustard (Dijon or yellow)
1/2 teaspoon chili powder (optional for heat)

1. Prep the ribs: Remove the thin membrane from the back of the ribs (use a paper towel for grip). Pat dry with paper towels.
2. Season: Mix olive oil, paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the ribs. Let them marinate for at least 1 hour (or overnight in the fridge).
3. Cook (Oven method):
Preheat oven to 150ยฐC (300ยฐF).
Wrap ribs in foil (meaty side up) and place on a baking tray.
Bake for 2.5 to 3 hours until tender.
4. Make the BBQ sauce: Combine all sauce ingredients in a saucepan. Simmer for 10โ15 minutes, stirring occasionally, until thickened.
5. Finish on the grill or broiler:
Unwrap ribs and brush generously with BBQ sauce.
Grill or broil for 5โ10 minutes until caramelized and slightly charred.
6. Serve: Let ribs rest for 5โ10 minutes. Slice between the bones and serve with extra sauce on the side.
