Broccoli and Mushroom Stir Fry Recipe

1 small onion, thinly sliced
2 cloves garlic, minced
1-inch piece fresh ginger, grated
3 cups broccoli florets (about 1 medium head)
2 cups mushrooms, sliced (button, cremini, or shiitake work well)
1 tablespoon soy sauce (low-sodium, if preferred)
1 tablespoon oyster sauce (or vegetarian oyster sauce)
1 teaspoon rice vinegar (or white vinegar)
1 teaspoon sugar (optional, for added sweetness)
1/2 teaspoon red pepper flakes (optional, for a bit of spice)
2 tablespoons water or vegetable broth
1 tablespoon toasted sesame seeds (for garnish)
Fresh cilantro or green onions (optional, for garnish)

Stage 1: Prepare the Vegetables
Cut the broccoli: Begin by cutting the broccoli into bite-sized florets. Rinse and set aside.
Slice the mushrooms: Clean and slice the mushrooms. If using larger mushrooms like portobellos, chop them into smaller pieces to match the size of the broccoli.
Prepare aromatics: Thinly slice the onion, mince the garlic, and grate the fresh ginger. Set these aside to add to the stir-fry later.
Stage 2: Stir Fry the Vegetables
Heat the oil: In a large wok or skillet, heat the sesame oil over medium-high heat. Once hot, add the sliced onion and cook for 2-3 minutes, until softened and fragrant.
Add garlic and ginger: Add the minced garlic and grated ginger to the pan, cooking for an additional 1 minute, stirring constantly to prevent burning.
Cook the broccoli: Add the broccoli florets to the pan and stir-fry for 3-4 minutes until they begin to turn bright green and are tender-crisp. If the pan becomes too dry, add a splash of water or broth to help steam the broccoli and prevent burning.
Add mushrooms: Add the sliced mushrooms to the pan and cook for another 5 minutes, or until they release their moisture and become tender.
Stage 3: Prepare the Stir-Fry Sauce
Mix the sauce: In a small bowl, combine the soy sauce, oyster sauce, rice vinegar, sugar (if using), and red pepper flakes (optional). Stir to combine.
Pour the sauce into the pan: Once the mushrooms are tender and the broccoli is cooked to your liking, pour the stir-fry sauce over the vegetables. Stir to coat everything evenly and allow the sauce to cook and thicken slightly, about 2 minutes. Add 1-2 tablespoons of water or vegetable broth to achieve your desired sauce consistency.
Stage 4: Serve and Garnish
Serve: Remove from heat and transfer the stir-fry to serving dishes.
Garnish: Sprinkle with toasted sesame seeds and garnish with fresh cilantro or sliced green onions, if desired.
