Buttery Garlic Pork Chops with Smooth Mashed Potatoes

– 4 boneless pork chops
– 3 tbsp butter
– 4 cloves garlic, minced
– 1 tbsp olive oil
– 1/2 tsp dried thyme
– Salt and pepper to taste
– 4 large potatoes, peeled and chopped
– 1/2 cup heavy cream
– 2 tbsp butter (for mashed potatoes)
– 1/4 cup grated parmesan cheese

Start by boiling the chopped potatoes in a large pot for about 15 minutes or until they’re tender. Once done, drain the potatoes and mash them with butter, heavy cream, and parmesan cheese. Don’t forget to season with salt and pepper to your liking.

While the potatoes are cooking, heat olive oil in a skillet over medium-high heat. Take your pork chops and season them with salt, pepper, and a sprinkle of thyme. Cook the pork chops in the skillet for 4-5 minutes on each side until they’re golden brown and cooked through. Once done, remove them from the skillet and set aside.

In the same skillet, melt some butter over medium heat and add your minced garlic. Sauté the garlic for about 1-2 minutes until it becomes fragrant. Then, return the pork chops to the skillet and coat them with the delicious garlic butter sauce for a couple of minutes.
