2 cups cooked rice
1 lb chicken sausage, sliced
1 zucchini, sliced
1 bell pepper (yellow or red), sliced
1/2 cup cherry tomatoes, halved
1/2 red onion, sliced
2 tbsp olive oil
1 tsp Cajun seasoning
1/2 tsp smoked paprika
1/2 tsp garlic powder
Salt & pepper, to taste
Fresh parsley, for garnish (optional)

Step by Step:

1️⃣ Sauté the Sausage:
Heat 1 tbsp olive oil in a pan over medium heat.
Add sliced chicken sausage and cook until browned, about 5 minutes.
Remove and set aside.
2️⃣ Cook the Veggies:
In the same pan, add another tbsp of olive oil.
Sauté zucchini, bell peppers, onions, and cherry tomatoes.
Season with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
Cook until tender, about 7 minutes.
3️⃣ Combine Everything:
Return the sausage to the pan and mix well.
Let the flavors meld for another 2 minutes.
4️⃣ Serve Over Rice:
Spoon the sausage and veggie mixture over cooked rice.
5️⃣ Garnish & Enjoy:
Sprinkle with fresh parsley if desired.
