Ingredients:

1 lb ground beef, lean

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp Worcestershire sauce

→ Tangy Burger Sauce

1/2 cup mayonnaise

2 tbsp grated onion

2 tbsp ketchup

1 tbsp relish

2 tsp yellow mustard

1 tsp white vinegar

1/4 tsp paprika

→ Quesadilla Ingredients

4 large flour tortillas

16 thin slices of cheddar cheese

1/2 cup chopped dill pickles

1/2 cup finely minced onion

1 tbsp olive oil

 

Directions:

Make the Tangy Burger Sauce:
In a small bowl, combine the mayonnaise, grated onion, ketchup, relish, yellow mustard, white vinegar, and paprika. Mix thoroughly until smooth. Cover the bowl and refrigerate the sauce to let the flavors meld while you prepare the rest of the meal.

Cook the Ground Beef:
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon or spatula, until fully browned—this should take about 5–7 minutes. Drain any excess grease from the skillet.

Season the Beef:
Return the skillet to the heat and add the salt, black pepper, garlic powder, and Worcestershire sauce. Stir well to evenly distribute the seasonings. Remove the skillet from heat once everything is well combined.

Assemble the Quesadillas:
Lay the flour tortillas flat on your work surface. Place 2 slices of cheddar cheese on one half of each tortilla. Divide the seasoned beef evenly among the tortillas, spreading it on top of the cheese. Sprinkle chopped pickles and minced onion over the beef. Add 2 more slices of cheddar cheese on top of the fillings, then fold each tortilla in half to form a half-moon shape.

Cook the Quesadillas:
Using the same skillet (or a clean one), heat it over medium-high heat and add a small amount of olive oil. Once the oil is hot, place a quesadilla in the skillet and cook until golden brown and crispy, about 2–3 minutes per side. Repeat with the remaining quesadillas, adding more oil as needed.

Rest and Serve:
Transfer the cooked quesadillas to a cutting board and let them rest for a minute. Slice each into 2–3 triangles using a sharp knife or pizza cutter. Serve hot with the tangy burger sauce on the side for dipping.
