Cheesy Broccoli Rice Casserole

βœ” 2 cups cooked white rice (long-grain or basmati works great!)
βœ” 2 cups fresh broccoli florets, steamed (tender but not mushy!)
βœ” 2 cups shredded cheddar cheese, divided (sharp cheddar adds bold flavor!)

βœ” 1 can (10.5 oz) condensed cream of chicken soup (or cream of mushroom for a vegetarian version!)
βœ” Β½ cup milk (to keep it creamy!)
βœ” ΒΌ teaspoon garlic powder (adds depth of flavor!)
βœ” ΒΌ teaspoon onion powder (enhances savory goodness!)
βœ” Β½ teaspoon salt, or to taste
βœ” ΒΌ teaspoon black pepper, or to taste
βœ” ΒΌ cup breadcrumbs or crushed crackers (optional topping for crunch! )
βœ” 1 tbsp melted butter (for the topping, optional)

1️⃣ Preheat & Prepare
Preheat oven to 375Β°F (190Β°C).
Lightly grease a 9Γ—13-inch baking dish.
2️⃣ Cook & Combine Ingredients
In a large bowl, mix together:
βœ… Cooked rice
βœ… Steamed broccoli florets
βœ… 1Β½ cups shredded cheddar cheese
βœ… Shredded chicken (if using)
βœ… Condensed cream of chicken soup
βœ… Milk
Garlic powder, onion powder, salt, and pepper
Stir until everything is well combined.
3️⃣ Assemble & Add Cheese
Pour the mixture into the prepared baking dish.
Sprinkle the remaining Β½ cup of shredded cheddar cheese over the top.
4️⃣ Add an Optional Crunchy Topping
(If you love a crispy topping, try this!)

In a small bowl, mix ΒΌ cup breadcrumbs (or crushed crackers) with 1 tbsp melted butter.
Sprinkle over the casserole for a golden, crispy finish.
5️⃣ Bake to Perfection
Bake uncovered for 25–30 minutes, or until the cheese is bubbly and golden brown.
Let cool for 5 minutes before serving.
