Cheesy Broccoli Rice Casserole

✔ 2 cups cooked white rice (long-grain or basmati works great!)
✔ 2 cups fresh broccoli florets, steamed (tender but not mushy!)
✔ 2 cups shredded cheddar cheese, divided (sharp cheddar adds bold flavor!)
✔ 1 cup cooked chicken breast, shredded (optional)
✔ 1 can (10.5 oz) condensed cream of chicken soup (or cream of mushroom for a vegetarian version!)
✔ ½ cup milk (to keep it creamy!)
✔ ¼ teaspoon garlic powder (adds depth of flavor!)
✔ ¼ teaspoon onion powder (enhances savory goodness!)
✔ ½ teaspoon salt, or to taste
✔ ¼ teaspoon black pepper, or to taste
✔ ¼ cup breadcrumbs or crushed crackers (optional topping for crunch! )
✔ 1 tbsp melted butter (for the topping, optional)

1️⃣ Preheat & Prepare
Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
2️⃣ Cook & Combine Ingredients
In a large bowl, mix together:
✅ Cooked rice
✅ Steamed broccoli florets
✅ 1½ cups shredded cheddar cheese
✅ Shredded chicken (if using)
✅ Condensed cream of chicken soup
✅ Milk
Garlic powder, onion powder, salt, and pepper
Stir until everything is well combined.
3️⃣ Assemble & Add Cheese
Pour the mixture into the prepared baking dish.
Sprinkle the remaining ½ cup of shredded cheddar cheese over the top.
4️⃣ Add an Optional Crunchy Topping
(If you love a crispy topping, try this!)

In a small bowl, mix ¼ cup breadcrumbs (or crushed crackers) with 1 tbsp melted butter.
Sprinkle over the casserole for a golden, crispy finish.
5️⃣ Bake to Perfection
Bake uncovered for 25–30 minutes, or until the cheese is bubbly and golden brown.
Let cool for 5 minutes before serving.
