β 4 boneless, skinless chicken breasts
β 1 cup mushrooms, finely chopped
β Β½ cup cream cheese, softened
β Β½ cup shredded mozzarella cheese
β 3 tbsp butter
β 3 garlic cloves, minced
β 1 tsp dried thyme
β 1 tsp dried parsley
β Salt and pepper, to taste
β ΒΌ cup grated Parmesan cheese
β Fresh parsley, for garnish

1. Preheat oven to 375Β°F (190Β°C).
2. In a skillet, melt butter over medium heat. Add garlic and mushrooms, cooking until mushrooms are soft and the garlic is fragrant.
3. Stir in cream cheese, mozzarella, thyme, and parsley. Cook until the cheese is melted and the mixture is smooth. Season with salt and pepper.
4. Cut a pocket in each chicken breast and stuff with the mushroom mixture. Secure with toothpicks if needed.
5. Place the stuffed chicken breasts in a baking dish, sprinkle with Parmesan cheese, and bake for 25β30 minutes, until the chicken is fully cooked.
6. Garnish with fresh parsley and serve hot.
