Cheesy Ranch Potatoes and Smoked Sausage

1 lb smoked beef sausage, thinly sliced
2 lbs potatoes, diced
1 cup shredded cheddar cheese
1 packet ranch dressing mix
1/2 cup milk
1/4 cup melted butter
1 onion, finely diced
2 cloves garlic, minced
Salt and pepper to taste
1/2 cup chopped green onions for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).
Cook the Sausage: In a large skillet over medium heat, brown the sliced sausage until fully cooked. Set it aside.
Sauté the Onions and Garlic: Using the same skillet, sauté the finely diced onions and minced garlic until they turn translucent and aromatic.
Mix the Ingredients: In a large mixing bowl, combine the diced potatoes, browned sausage, sautéed onions and garlic, shredded cheddar cheese, ranch dressing mix, milk, and melted butter. Season with salt and pepper to your liking.
Bake: Transfer the potato and sausage mixture into a greased baking dish, spreading it evenly. Cover with aluminum foil and bake for 60 minutes.
Finish Baking: Remove the foil and continue baking for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
Garnish and Serve: Once out of the oven, sprinkle chopped green onions on top for added flavor and freshness. Enjoy!
