For the Chicken Scampi:
4 boneless, skinless chicken breasts (or thighs), pounded to an even thickness
Salt and pepper , to taste
2 tbsp olive oil
4 tbsp unsalted butter , divided
4 garlic cloves , minced
1/2 cup chicken broth
1/4 cup fresh lemon juice (about 2 lemons)
Zest of 1 lemon
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley , plus extra for garnish
Optional : Red pepper flakes for a hint of heat
For the Garlic Parmesan Rice:
1 cup long-grain white rice (or jasmine rice)
2 cups chicken broth
2 tbsp unsalted butter
2 garlic cloves , minced
1/4 cup grated Parmesan cheese
Salt and pepper , to taste

Step 1: Cook the Garlic Parmesan Rice
In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Stir in the rice and toast it for 1–2 minutes, stirring frequently to coat it in the butter and garlic.
Add the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15–18 minutes , or until the rice is tender and the liquid is absorbed.
Remove from heat and stir in the grated Parmesan cheese, salt, and pepper. Cover and set aside while you prepare the chicken scampi.
Step 2: Prepare the Chicken
Season the chicken breasts generously with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side , or until golden brown and cooked through (internal temperature should reach 165°F/75°C ). Remove the chicken from the skillet and set aside.
Step 3: Make the Lemon-Garlic Sauce
In the same skillet, reduce the heat to medium and add 3 tablespoons of butter. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth, lemon juice, and lemon zest. Simmer for 3–4 minutes, allowing the sauce to reduce slightly.
Stir in the remaining 1 tablespoon of butter and the grated Parmesan cheese until the sauce is smooth and glossy. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
Step 4: Combine and Serve
Return the cooked chicken to the skillet, spooning the sauce over the top to coat. Let it warm through for 1–2 minutes.
Serve the chicken over a bed of garlic Parmesan rice. Garnish with chopped parsley and additional lemon zest for brightness
