Ingredients:

1 lb ground beef (80/20 blend for flavor)

1/2 lb ground pork

1 small onion (finely chopped)

2 cloves garlic (minced)

1 large egg

1 cup breadcrumbs

1/4 cup milk

2 tbsp Worcestershire sauce

2 tbsp ketchup (plus extra for topping)

1 tsp dried oregano

1 tsp dried thyme

Salt and pepper, to taste

For the Topping:

1/4 cup ketchup

1 tbsp brown sugar

1 tbsp Dijon mustard (optional)

Instructions:


1. Preheat Oven
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
2. Prepare the Meat Mixture
In a large mixing bowl, combine the ground beef, ground pork, chopped onion, minced garlic, egg, breadcrumbs, milk, Worcestershire sauce, 2 tablespoons ketchup, oregano, thyme, salt, and pepper. Mix gently with your hands or a spoon until just combined—avoid overmixing to keep the meatloaf tender.
3. Shape the Loaf
Transfer the mixture to the prepared pan or form it into a loaf shape on the baking sheet.
4. Make the Topping
In a small bowl, mix together the 1/4 cup ketchup, brown sugar, and Dijon mustard (if using). Spread evenly over the top of the meatloaf.
5. Bake
Bake for 55–65 minutes, or until the internal temperature reaches 160°F (71°C). If needed, broil for 2–3 minutes at the end to caramelize the topping.
6. Rest and Serve
Let the meatloaf rest for 10 minutes before slicing. This helps retain the juices and keeps it from falling apart.
