Classic Creamy Sweet Amish Macaroni Salad

 

 

 

 

 

 

 

Ingredients:

2 cups uncooked elbow macaroni
3 large eggs, hard-boiled
3 sticks celery, chopped
1 onion, chopped or diced
2 tbsp sweet pickle relish
3 tbsp yellow mustard
1 small red bell pepper, stemmed, seeded, and chopped
2 cups Miracle Whip salad dressing
¾ cup white sugar
2 ¼ tsp white vinegar
½ tsp celery seed
Salt and pepper to taste

Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water. Set aside to cool.
Peel and chop the hard-boiled eggs and place them in a large mixing bowl.
Add the chopped celery, diced onion, sweet pickle relish, and chopped red bell pepper to the bowl.
In a separate small bowl, whisk together the yellow mustard, Miracle Whip salad dressing, white sugar, white vinegar, celery seed, salt, and pepper until well combined.
Pour the dressing mixture over the ingredients in the large mixing bowl.
Add the cooled cooked macaroni to the bowl and gently toss until all ingredients are evenly coated with the dressing.
Cover the bowl and refrigerate the macaroni salad for at least 1 hour before serving to allow the flavors to meld.
Before serving, give the salad a final stir and adjust seasoning if needed.
